Roasted Red Pepper & Sweet Potato Soup


In an effort to learn how to cook this month, I’ve been looking for recipe inspiration everywhere. I came across Gena Hamshaw’s blog The Full Helping and found a great soup recipe plus other great recipes that I can’t wait to try out. The recipe is for Roasted Red Pepper & Sweet Potato Soup and its my new favourite winter soup.

The soup tastes amazing and it really easy too make. Which for an amateur cook like myself is a big plus! Take a look at Gena’s blog The Full Helping and also her Instagram.. Major food photography goals right there, its guaranteed to make you hungry, you have been warned.

Okay now onto the recipe.

  • 4 Large Peppers
  • 1 tablespoon of cooking oil
  • 1 onion
  • 2 gloves of garlic
  • 4 Sweet Potato’s
  • 1 pint of Vegetable broth + a little extra water if needed
  • Pinch of Salt



Roast the peppers in the oven on a tray lined with tin foil, for 40 mins or until the skins are wrinkled & charred.

Remove the stems, skin and seed from the peppers, chop roughly and set aside for afterwords

Heat the oil in a large pot over medium and add the onions. Cook until soft and clear 5-7 mins should do it.

Add the garlic and cook for a further minute

Add the potato’s, broth and salt and bring the mixture to boil. Once boiling turn down the hop to a simmer, cover and leave to simmer for 20-25 minutes or until the potato’s are soft.

Add the peppers then blend together until it’s a smooth & creamy soup. You can add extra water if you feel its a little thick.

Then Serve.
