I definitely have a love hate relationship with food. I love good health food with the added cake or sweet treat here & there.
As much as I want to be healthy all the time I have the biggest sweet tooth that I can’t give up.. So as much a I love some foods, I hate preparing food and hate not knowing what to eat. I’m a terrible cook and I’m also impatient when it comes to cooking. That being said i always overcook things in fear that I haven’t cooked them enough and it’ll make me ill. Honestly it’s a never ending cycle of love and hate.
There is also a lot of foods I can’t eat I have a dairy intolerant and I also am a bit intolerant to gluten. So it can be hard sometimes knowing the right things to eat and the healthier options to eat. Otherwise I find I end up sticking to the same foods every time. Which is why I’ve been trying out new recipes over the past couple of years and eliminating certain foods. I’ve also been conscious of what foods affects my stomachs and which foods I’m okay with.
Which brings me today’s recipe post for Vegan Banana Bread. Now I’m not a vegan as much as I have a dairy intolerance there is still some dairy products that I can eat. I also still eat plenty of meat too but there’s just something about the Vegan Banana Bread that tastes so good. It’s definitely got a lot more of a moist texture to it and tastes amazing when it’s warm.
I’ve only cooked this one a couple of times so far and I’m still trying to perfect the recipe but this one is a big hit in our house and I usually only get one slice before it’s all gone..
3 Large Banana’s
75g Vegetable Oil
100g of Brown Sugar
3 Tsp of Cinnamon
225g Plain Flour or Self Raising Flour
3 Heaped tsp baking powder ( 2 if using Self Raising Flour)
50g Dried Fruit – Coconut
Heat oven to 200c/180c
Line tin with grease proof paper for baking
Mash bananas & mix well with veg oil and the brown sugar
